Quinoa

Well, tonight we're embarking on yet another one of my experiments meal creations. Tonight I'm trying for the first time Quinoa (pronounced keen-wa). It is a grain that is used in many vegetarian recipes. It is high in protein, is a whole grain, contains no wheat, and is gluten free. I'm attempting to make a Quinoa stuffing for chicken legs.

Since this is a first run meal, I'll let you know how it goes.

Hi Christina ... since we have two people in the family who need gluten free I am very interested in knowing how the recipe turns out.

Okay, the stuffing had mixed reviews. First, my husband who I expected to not like the quinoa, liked it very much. And my daughter who I thought would like it, was not too sure about the texture.
So - while we had mixed reviews (but only on the texture), we had a five star review for the taste. There was a three thumbs up for flavor - it tasted like stuffing. So, I'll tweak this a bit and then add it to the recipe collection for the book (and post it here if folks are interested!)
